About Wide Street Brewing

Located in Ballymahon, Co. Longford, Wide Street Brewing Company is an avant-garde brewery known for its unique methods of wild fermentation, mixed fermentation, and 100% Brettanomyces fermentation. Originating from a keen home-brewing interest in these lesser-explored yeasts and fermentation techniques, the brewery has since matured into a specialist in its field.

Adhering to traditional brewing methods, Wide Street Brewing uses open top-fermenters, producing beers that are unfiltered, unpasteurised, and can-conditioned with a champagne yeast strain. This results in beverages that are dry and fully fermented, with a final gravity below 1.003, imbuing a distinctively dry mouthfeel and enhanced fruity flavours.

The brewery's house yeast, a custom blend of Brettanomyces, saccharomyces, and lactobacillus strains, originates from Bootleg Biology, a yeast laboratory based in Nashville, USA. Since launching in May 2019, Wide Street Brewing has released a myriad of innovative beer styles, from saisons and grisettes to table beers, and mixed fermentation aged sour beers. Always eager to experiment with new hops and brewing styles, the company has also introduced offerings such as a Farmhouse Pilsner and a Cashmere IPA without Brettanomyces.

Positioned on the edge of the Royal Canal Greenway, Wide Street Brewing Company welcomes visitors to their brewery, offering a chance to witness first-hand their unique approach to brewing.
