The secret behind its unique taste lies in the refermentation process that takes place in the bottle, coupled with a prolonged maturation period. This guarantees a beer with a pure character, delicate effervescence, and a delightful sweet taste of alcohol.

The brewing process of Duvel is meticulous. It begins with pure spring water and barley, which is the primary ingredient. The barley germinates for five days in the malt house, leaving behind malt. The colour of the malt, and consequently the beer, is determined by the temperature during this process. To achieve its typical bitterness, Duvel incorporates various varieties of aromatic Slovenian and Czech hops, known for their consistent and superior quality.

The fermentation of Duvel is a two-step process. Initially, it ferments in tanks at temperatures ranging from 20 to 26°C using a unique yeast culture. This original yeast strain, selected by Albert Moortgat in the 1920s, has its roots in Scotland. After maturing in storage tanks where the beer is cooled to -2°C, it's ready for bottling. The addition of extra sugars and yeast triggers a second fermentation in the bottle, taking place in warm cellars at 24°C for two weeks. Following this, the beer is transferred to cold cellars for another six weeks of maturation. This extended maturation period is unparalleled and is pivotal in delivering the refined flavour and pure taste of Duvel.
